Fun with the Grandkids?  Fall No-Bake Recipes

Crisp fall days are ahead and your grandkids will love whipping up these easy no-bake fall recipes with you. They’re easy to do and are delicious to eat. So go ahead and have some fun in the kitchen this fall.

Chocolate Hazelnut Thumbprint Cookies

Ingredients: 

One 8 oz. carton of spreadable cream cheese, one cup semi-sweet chocolate chips, melted, ½ cup nutella, 2 ¼ cups graham cracker crumbs, one cup chopped, toasted hazelnuts and one cup of whole toasted hazelnuts.

Mix the first three ingredients, add the crumbs and refrigerate for thirty minutes. Then shape into one inch balls. Let your grandchild use a wooden spoon or a thumb to make a dent in one side of each ball and insert a whole hazelnut into each. Store in layers between waxed paper in an airtight container in the fridge.

So easy and so much fun.

Pumpkin Pie in a Jar

These beauties were originally made in pint canning jars, but can easily be put together in clear glass containers of any kind. It’s fun in a jar!

Ingredients:

graham cracker or gingersnap crumbs, pumpkin puree with added cinnamon, nutmeg and cloves, whipped cream, caramel sauce. Make layers with crumbs, puree and whipped cream until you reach the top of the container. Top with drizzles of caramel and add a gingersnap on top.

These are both beautiful to see and tasty to eat.

PB and J Cheesecake Bites

You’ll need a flat surface for the base of these bites. You can use pretzel crisps or any flat biscuit such as almond biscuits.

Ingredients:

soft cream cheese, chunky peanut butter, confectioner’s sugar, soft butter, a pinch of salt and strawberry or raspberry preserves.

Mix two oz of soft cream cheese with ½ cup chunky peanut butter and ½ cup confectioner’s sugar. Add two T. of soft butter and a pinch of salt. Place a dollop of the mixture on your flat cookie or pretzel surface and top with a teaspoon of berry preserves. 

These are fancy enough to be appetizers and yummy enough to be dessert.

Chocolate Caramel Apple Nachos

Ingredients:

Granny smith apple slices, dark chocolate melting wafers, caramel dip, chopped pecans.

Place apple slices on a tray. Squeeze melted chocolate through a corner of a plastic sandwich bag. Drizzle over the apples. Repeat with the caramel. Sprinkle with chopped pecans.

When the apples are sliced, this recipe is easy enough for the kids to finish all by themselves. The finished product is a work of art.

Peanut Butter Popcorn Bars

Ingredients:

Ten cups popped corn, ½ cup sugar and ½ cup light corn syrup, ½ cup creamy peanut butter and ½ t. vanilla.

Place popcorn in a large bowl. An adult should bring the sugar and corn syrup together to a boil and boil for one minute. Stir in the peanut butter and vanilla and pour over the popcorn until it’s all mixed evenly.

Press into a buttered pan. Let rest and then cut into bars.

Enjoy these lovely autumn days with your family. There’s a lot of satisfaction in working with the grandkids to produce treats and then enjoying them together.
