GOATS CHEESE MOUSSE WITH RED PEPPERS
One packet of goats cheese
1-2 red peppers
A pinch of salt and ground black pepper
A drop of Extra Virgin Olive Oil ( adjust the oil at the end)
Roast the peppers in the oven or on a griddle pan if you prefer.
When the peppers are soft – gently peel off the skin.
Cut the peppers into strips and add oil, salt and pepper.
Put the peppers and the goats cheese into a mix- master ( add the olive oil if it is too dry)
Serve the goats cheese mousse in a small bowl and place the bowl on a platter with crackers and French toast.
(A tip from Aunt Mirella) – you can serve it differently with fresh tomatoes as follows:
Scoop out the inside of the tomatoes
Leave the tomatoes to stand up-side down to let out the excess liquid
Fill the tomatoes with the goats cheese and pepper mixer.
